The dry process method is a very unique and rare method to see coming out of the Yirgacheffe Region of Ethiopia, most Yirgacheffe coffee is washed. The dry processing method of this coffee begins with the taking the ripe coffee cherries, uniformly screen drying the coffee in the sun and then dry-milling it using the same screen density-sorting techniques as wet processed lots.

The new Ethiopia Commodity Exchange rules for Ethiopian coffee exports requires that all lots be made anonymous when they enter the Government warehouse, with the exception of a few cooperative coffees. So we don’t know exactly which cooperatives or mill this lot is from. It’s amazing coffee, unfortunately we just don’t know much about it’s origin.
